Very good head cheese
I remember head cheese from my childhood in very German Dayton, Ohio. My dad would bring it home and make sandwiches. This is every bit as good, which tells me that the old recipe is still in use. A great find for me.

I live on the east coast and my husband and I like to fancy ourselves as charcuterie afficionados. I was pleasantly surprised to stumble across this website during the holidays! This head cheese is absolutely divine, and full of refined flavor. So delicious, it should be called 'Porcine Gelee' or something schmancy because of the amazing refined flavor.
