German Apple Cake Recipe

A favorite German dessert in Hermann!

Cake

2 large eggs

1 cup vegetable oil

1 3/4 cup white sugar

1 tsp vanilla

2 cups flour

2 tsp cinnamon

1 tsp salt

1 tsp baking soda

4 cups peeled, thinly sliced Granny Smith apples

Preheat oven to 350°F; grease and flour a 9 x 13 baking dish.

Add vegetable oil to eggs in mixer and beat until foamy. Add the sugar and vanilla and mix. Add the flour, cinnamon, salt, and baking soda. Mix together. Add sliced apples by folding in with a spatula. The batter will be very thick and there will seem to be many more apples than batter but this is normal.

Bake for 50-60 minutes.

Frosting

1 8 oz package cream cheese, softened

3 tbsp melted butter

1 tsp vanilla

1 1/2 cups powdered sugar

Mix ingredients until smooth. Add a little milk if frosting is too thick. Frost the cake when cool.
