Tailgate Beer Brats From the Wurstmeister

Do you know when the first tailgate party happened? November 6, 1869, at the first intercollegiate football game, Princeton vs. Rutgers. Spectators lowered their buckboards of their horse drawn wagons to serve lunch from picnic hampers.
Today, tailgating is an obsession with Americans. Even Wurstmeister Mike was a tailgator back in the day. His favorite food to serve was grilled bratwursts of course. Bratwurst can dry out quickly though, if not kept moist. So he cooks his brats in beer and onions.
Here's his recipe for tailgate day brats:
1/4 cup butter
2 onions, thinly sliced
4 garlic cloves, finely chopped
2 teaspoons red pepper flakes
3-4 cans beer
8 Wurst Haus Best of Show Bratwurst
8 crusty rolls or hot dog buns
Favorite mustard
Dill pickles
1. Prepare the grill for a medium-hot fire
2. Place the butter in a medium disposable foil roasting pan. Place the pan on the grill rack and cook until the butter melts. Add the onions and garlic; cook until softened, three to five minutes. Add the beer and bring to a simmer. Place the pan on the low heat zone and keep the onion mixture warm.
3. Place the bratwurst on the grill rack. Grill, turning occasionally, until evenly charred, four to five minutes. Transfer the bratwurst to the onion mixture and let stand until ready to serve.
4. With tongs, place the bratwurst in the rolls. Serve with the onions, mustard, and Dill pickles.
