North Carolina-Style Cole Slaw Recipe

Here's one of Wurstmeister Mike's favorite sides to have with his pulled pork or hickory smoked brisket.
Vinegar Sauce
2 cups cider vinegar
1 1/3 cups water
1/2 cup + 2 tbs Ketchup
1/4 cup packed brown sugar
5 tsp salt
4 tsp hot red pepper flakes
1 tsp freshly ground pepper
1 tsp freshly ground white pepper
Whisk in a medium bowl until sugar and salt dissolve. Makes 4 cups
Cole Slaw Ingredients
1 small or 1/2 large head green cabbage (about 2 pounds), cored
1 cup Vinegar Sauce, or to taste
Salt (optional)
chop the cabbage fine by hand or on a mandolin or shred using a food processor.
In a large bowl, stir in vinegar sauce. Let stand 10 minutes, add additional sauce or salt as needed.
